In stress tests, even with a good cooling system (closed loop water) you would likely be thermally limited (almost instantly goes 90°c and drops frequencies). It has high leakage dies, so it would run much hotter that 5600x(low leakage dies) or 5900x (1low+1high leakage die). There is little reason to go 5800x specifically though, unless you get good discount (got mine for 400$). You can make some conclusions considering i7-8700 is virtually identical to i5-10600.
